小麦作为白酒酿造和制曲的原料,其品质影响着白酒的质量和风味。随着经济社会的发展和人民生活水平的提高,对酒的品质要求也更高,越来越多的酒企更加注重从“一粒粮食到一滴美酒”的每一个细节,尤其是对酿酒专用小麦的关注更是上升到了一个新的高度。本文介绍了酿酒专用小麦的概念与质量要求、品种选育进展、发展现状;针对四川酿酒专用小麦产业发展中的问题,从品种改良、标准化种植、基地建设等方面提出了意见和建议。 |

Wheat is the raw material for Chinese liquor brewing and koji making, and its quality affects the quality and flavor of liquor. With the development of the economy and society and the improvement of people"s living standards, the quality requirements for Chinese liquor are also higher, and more and more Chinese liquor companies pay more attention to every detail from "a grain of grain to a drop of fine Chinese liquor ", especially for special Chinese liquor. Wheat attention has risen to a new level. This paper introduces the concept, quality requirements, breeding progress and development status of special wheat for brewing. In view of the problems in the development of special wheat industry for brewing in Sichuan, opinions and suggestions were put forward from the aspects of variety improvement, standardized planting and base construction. |
