      为了解不同施氮水平对啤酒大麦麦芽品质的影响,以10个江苏大面积推广或示范种植的二棱大麦品种(系)为材料,设0 kg·hm-2、75 kg·hm-2和150 kg·hm-2 3个施氮水平,采用裂区设计,分别测定了3个氮水平下大麦籽粒麦芽的糖化力、库尔巴哈值、α-氨基氮含量和浸出率共4个主要麦芽品质指标。结果表明,施氮水平对4个被测麦芽品质指标均有显著影响,糖化力和α-氨基氮含量随施氮水平提高而显著增加,库尔巴哈值和浸出率随施氮水平提高而显著降低。施氮水平和品种(系)对4个麦芽品质指标均有显著影响,施氮水平与品种(系)互作效应对糖化力和库尔巴哈值的影响也达极显著水平。在3个施氮水平下,糖化力与α-氨基氮含量呈显著或极显著正相关,与浸出率呈极显著负相关;浸出率与库尔巴哈值呈极显著正相关,与α-氨基氮含量呈极显著负相关。综合4个麦芽指标的表现及糖化力和库尔巴哈值的稳定性,扬农啤7号和苏啤6号的麦芽综合品质及丰产性均较好,建议在江苏省广泛推广;供试大麦品种(系)整体以中氮水平(75 kg·hm-2)的麦芽品质较好。研究结果可为江苏优质啤酒大麦原料的生产品种(系)选用及氮肥施用技术提供依据。

      To study the effect of nitrogen application on barley malting qualities, ten two-rowed barley varieties(lines) planted in Jiangsu province were used as materials, with a split plot experiment design in this study. The malting qualities diastatic power, Kolbach index, α-amino nitrogen and malt extract were determined at different nitrogen fertilizer levels, including 0 kg·hm-2, 75 kg·hm-2 and 150 kg·hm-2. The results demonstrated that the level of nitrogen application had significant effect on the four main malt quality traits, diastatic power and α-amino nitrogen were increased significantly with the increase of nitrogen fertilizer level, while Kolbach index and malt extract were decreased. The nitrogen level and variety(lines) have significant effect on the four malt parameters.The diastatic power and Kolbach index showed significant correlation under the interaction between nitrogen levels and barley varieties(lines).Under the three nitrogen fertilizer levels, diastatic power was significantly positively correlated with α-amino nitrogen,but negatively correlated with malt extract; the malt extract was significantly positively correlated with Kolbach,but negatively correlated with α-amino nitrogen.Considering the phenotype of the four malt indices, the stability of diastatic power and Kolbach index, Yangnongpi 7 and Supi 6 had better malt quality and high yield, which were recommeded to bewidely promoted in Jiangsu province.The better malt quality of barley varieties was achieved at the level of medium nitrogen(75 kg·hm-2). The results provide a basis for the selection of high quality malting barley varieties(lines) and the application technology of nitrogen fertilizer in Jiangsu province.
