      小麦面粉或面制品的色泽是评价小麦品质性状的主要指标。小麦籽粒脂肪氧化酶(LOX)是影响面粉及面制品颜色发生褐变的主要因素之一,且与小麦加工品质、储藏品质密切相关。目前,分光光度法和氧化电极法是测定小麦籽粒LOX活性最为常用的方法。小麦籽粒LOX活性是一个受多基因控制的复杂数量性状,基因型和环境对其均有显著影响,但基因型是最为主要的决定因素。控制小麦籽粒LOX活性的主效基因被定位在4A、4B、4D和5D染色体上,目前已有多个控制LOX活性的分子标记被开发,可直接用于小麦脂肪氧化酶活性的分子标记辅助选择。本文综述了小麦籽粒脂肪氧化酶测定方法及其影响因素,阐述了小麦籽粒脂肪氧化酶的基因定位、克隆、等位变异类型以及功能标记的开发和利用情况,并系统地阐明了脂肪氧化酶与小麦品质性状的关系。

      The color of wheat flour and flour products is an important factor of wheat quality traits. Lipoxygenase (LOX) activity is one of the most important factors causing undesirable brown discoloration of flour or end use products in bread wheat, and is closely related to the wheat processing quality and storage quality. It is important for the improvement of wheat quality to dissect genetic basis of wheat grain LOX activity and illustrate its association with wheat flour or flour products color. At present, spectrophotometry and oxide electrode were most commonly used for detecting LOX activity in wheat grain. LOX activity in wheat grain is a complicated quantitative trait controlled by multiple genes. Lox activity could be influenced significantly by genotype and environment, whereas genotype was the most important factor for determining LOX activity in wheat. The main genes controlling LOX activity have been located on chromosomes 4A,4B,4D and 5D,respectively.Subsequently, a series of functional markers have been developed and could be used for marker assisted selection (MAS) in terms of LOX activity. In this paper, we summarized the progress in measuring methods and influencing factors of LOX activity in bread wheat, and illustrated the advances on gene cloning and functional markers of LOX activity as well as association of LOX activity with different wheat quality traits. It could provide useful information for the improvement of wheat quality in Chinese wheat breeding program.
