Barley is a major cereal grain in the world, a member of the grass family. (1,3 1,4) β glucan, which is one of the important functional components in seeds of barley, serves as a major animal fodder, as a base malt for beer and certain distilled beverages, and as a component of various health foods. This paper reviewed the new research progress of barley (1,3 1,4) β glucan, including the physical and chemical properties, efficiency extract methods and technology, and its functions in beer and malt production, animal fodder and medicine health. |
