      为了解肌醇对大麦发芽的影响,研究了浸麦阶段添加肌醇对大麦发芽过程中α 淀粉酶、纤维素酶、蛋白酶、植酸酶、β 葡聚糖酶活力的影响,并对麦芽部分指标进行了比较。结果发现,外源添加肌醇能提高发芽过程中水解酶的活力,α 淀粉酶、纤维素酶、蛋白酶、植酸酶、β 葡聚糖酶活力与对照相比分别提高38.1%、7.0%、12.3%、68.9%、20.5%;浊度降低63.2%,β 葡聚糖降低17.5%,库尔巴哈值得到提高。
英文摘要:
      In order to understand the effect of inositol on the development of effect of added inositol in the process of barley steeping on the activity of α amylase, cellulase, protease, phytase and β glucanase in malting barley were studied, and some indicators of maltling barley were further compared. It was found that, added exogenous inositol could improve the activity of hydrolytic enzymes in the germination process and compared with the control the activity of α amylase, cellulase, protease, phytase and β glucanase could be increased up to 38.1%, 7.0%, 12.3%, 68.9% and 20.5%, respectively. The turbidity of wort could be decreased by 63.2%, and the β glucan could be decreased by 17.5%, and the kolbach index of wort was improved.
