      为了解大麦发芽过程中功能成分的变化,用分光光度计测定了28份大麦籽粒发芽前(无菌水浸泡24 h,记作发芽0 d)及发芽1~9 d的γ 氨基丁酸(GABA)、总黄酮和生物碱的含量差异,结果表明:(1)大麦籽粒中的GABA和生物碱含量均为发芽0 d高于发芽1~2 d,而明显低于发芽3~9 d的相应含量;发芽前后GABA累积最大均值是最小均值的2.1倍,生物碱累积最大均值是最小均值的11.6倍。(2)大麦籽粒发芽前总黄酮含量最高,发芽后相对较低;而发芽4~8 d期间的GABA和生物碱含量相对较高。(3)不同大麦品系间籽粒GABA和生物碱含量在发芽4~6 d差异明显,且达到峰值的频率较高;籽粒总黄酮含量在发芽8~9 d差异明显,发芽前总黄酮含量达到峰值的频率最高。
英文摘要:
      The difference of γ aminobutyric acid (GABA) and total flavones as well as alkaloids content(mg·100g-1) in grain and it's malt during 1~9 days germination of 28 barley cultivars were determined by spectrophotometry. The analytical results were as follows: (1) GABA and alkaloids content of barley grains before the germination are higher than that of 1~2 days but clear lower than that of 3~9 days after the germination, the most value for GABA's cumulation between barley grain and it's malt during 1~9 days germination is 2.1 times of the least value, however the most value for alkaloids cumulation is 11.6 times of the least value. (2) Total flavones of the barley grains before the germination is the highest, and it is relative low after the germination, but GABA and alkaloids content in malt for 4~8 days during germination are higher. (3)It was clear difference and peak value with the highest frequency of GABA and alkaloids content in barley grains during 4~6 days among cultivars in the same term; but clear difference and peak value with the highest frequency of total flavones during 8~9 days among cultivars in the same term.
